This homemade O’Henry bars recipe comes to me from a good friend and former roommate. The first time she made them, I was hooked! They’re great for summer, because you don’t have to turn on the oven. They’re great for the winter, because they’re made from things like peanut butter, light corn syrup, and chocolate chips. Seriously! What’s not to love about that…any time of the year! (I especially like to fill treat tins with these bars to give at Christmas time.)

Ingredients:
1/2 cup butter (can substitute margarine here)
2 cups quick oats
1/2 cup brown sugar
1/4 cup light corn syrup
1/2 cup peanut butter
1 cup chocolate chips, melted (I sometimes add more if I’m feel especially decadent!)

Instructions:
Melt butter in a small saucepan over medium heat. Add brown sugar and light corn syrup. Stir. Remove from heat and mix in peanut butter. Spread entire mixture in an 8 x 8 inch pan. Melt chocolate chips in the microwave and spread over the top. Let cool. Enjoy!
