You may have noticed a conspicuous lack of posts here lately. Unfortunately, I had a temporary lapse of sanity back in March and told my kids that they could do three or four 4-H projects…EACH! (“Of course, honey, you can make a scrapbook.” “Why, yes, dear, I think taking a foods project would be nice.”)

What sounded good in March turned into a nightmare as we pushed to get those jumpers hemmed and project books completed. Now that we’re past the bulk of judging (our county fair is later than most), I’ll have more time to post on this site again! In the meantime, here’s our weekly menu plan. Hope it offers some inspiration for your own dining room table!

Monday – Fried Chicken. This is one of my hubbies’ favorites. I’ll be making mine with mashed potatoes and green beans straight from the garden.

Tuesday – “Must Go’s.” I first heard of this menu option from my neighbor, who’s mother-in-law served a spread of leftovers one night and told the family that everything “must go.”

Wednesday – Crockpot Chicken Cajun and Rice. This is a new one for me. We’ll be out most of the day for homeschool activities, including a writing workshop on “fractured fairy tales,” so a crockpot meal is must if we plan to eat dinner on time. I’ll post a review after we give it a try.

Thursday – Easy Beef Stroganoff. Just as the title says, this recipe is super simple. Just boil a bag of wide egg noodles, brown some ground beef, add in a can of cream of chicken soup, half a can of milk, 1/4 cup Parmesan cheese, and salt and pepper to taste. Mix it all together and bake at 400 degrees. Remove from oven and top with shredded cheddar cheese. Serve warm.

Friday – Homemade Pizza. I’m thinking about making the pizza on the grill this time. I tried this recipe once before and loved the taste, but our grill was on its way to the trash heap after many years of faithful service, and it turned the crust gray. Not very appealing. Now that we have a new grill, the pizza crust is heading outside to bake.

Saturday – Sesame Chicken. I’ll serve this over rice, with peppers and onions from our garden.

Sunday –  Sloppy Joes. We’ll be wrapping up our 4-H judging with demonstrations and style revue, so I’d better keep those tummies full!
