Magnetic Menu Planning Board

Sporting a range of pork, chicken, and beef, this weekly menu plan is sure to please everyone in my house…most days! According to family rules, you have to eat at least three bites without complaint, and you only get dessert if you eat everything. No exceptions. I never make a second meal for anyone, although I am willing to accommodate children’s requests not to mix all their food together, as in our salmon salad. They’ll eat the ingredients for this yummy salad separately.

Monday – Spaghetti and Meatballs

Tuesday – Pork chops, fried potatoes, and green beans. If the weather is nice, we might try the grill. If so, I’ll be using this marinade. Otherwise, I’ll just sprinkle the chops with seasoned salt and flour and fry them in light oil.

Wednesday – Tacos

Thursday – Roasted chicken, mashed potatoes, and frozen corn

Friday – Biscuits and gravy, scrambled eggs, and fruit salad. (Please tell me we’re not the only family who enjoys breakfast for our evening meal! Any other evening breakfast fans out there?)

Saturday – Chicken potpie. Be sure to use your leftover chicken meat from Thursday’s roasted chicken for extra savings!

Sunday – Salmon saladAgain, if the weather holds, I’ll cook the salmon on the grill. If not, you can also bake it at 450 degrees for 12 – 15 minutes. Salmon will flake easily with a fork when it’s done.
