Gooey Cake crumbs

Guess what I ate for breakfast yesterday? If you guessed Gooey Cake, you’re right. 🙂

I blame my friend Christina for this sudden lapse in judgment and complete lack of self-control. I had never even heard of Gooey Cake before she made it for me last weekend. (Christina tells me this is because I’m not from the South, so I’m really glad my southern friend introduced this northern girl to a super yummy dessert…I mean, er, breakfast!) 🙂

If you’ve never heard of Gooey Cake either, and you’re hesitant to try it, let me just tell you a few of the ingredients. Butter (a whole stick). Powdered sugar (one pound). And cream cheese (8 ounces). Need I say more? It’s so simple to make, and super delicious besides.

When I confessed my breakfast choice to Christina, she told me not to worry, because the cream cheese makes the cake a lot like a cheese Danish, and people eat those for breakfast all the time. I like the way this woman thinks! 🙂

If you’d like to try it out, you can make it really quickly in a few simple steps:

Ingredients:
Crust
1 box of yellow cake mix
1 stick of softened butter
1 egg

Topping
1 8-oz. package of cream cheese
1 lb. powdered sugar (This equals four cups, in case you end up buying a 2-pound bag, like I did.)
2 eggs
¼ tsp. vanilla

Instructions:
Preheat the oven to 375 degrees.

In a large bowl, blend the yellow cake mix, softened butter, and egg together until the mix forms a dough-like consistency. Press the crust mix in an ungreased 9 x 13 pan with your fingers.

 

gooey cake_toppinggooey cake_spreading the toppingIn a separate bowl, beat the cream cheese until softened. Add the powdered sugar, eggs, and vanilla. Mix together until creamy. Spread over the crust mixture.

Bake for 30 – 35 minutes or until the cake turns a golden brown color. Note that the cake will rise while it’s baking and then fall slightly while cooling.

 

Let the cake cool completely before serving. It will have a gooey consistency in the middle (hence the name), with a delightfully thin crusty layer on the top. Delicious!
