Hearty Steak Pie

Oh my goodness! I just realized that I have never shared one of my family’s favorite beef recipes with you. It’s Hearty Steak Pie, and it’s not only delicious but also super simple to make.

I first came across this recipe in one of my favorite cookbooks: Slow Cooker, Casseroles, and One-Dish Meals. I adapted it to suit my family’s tastes, and I couldn’t be happier with the results.

It’s chock-full of veggies, which makes Mom happy. The beef is seasoned with a slightly peppery taste, thanks to a healthy dose of thyme, pleasing Dad. And it’s covered with refrigerator biscuits, which is always a kid-approved ingredient at our house. (Check for biscuit coupons here.)

With Hearty Steak Pie, everybody wins—even the person on cleanup duty, since this beef recipe is a one-dish meal. (That, of course, is assuming that the person who cooked the potatoes, carrots, and beef cleaned up after herself while the pie was cooking in the oven!) 🙂

Ingredients:
1 pound top round steak, cooked and cut into cubes or shredded (my family’s preference)
1 cup chopped, cooked carrots
2 cups diced, cooked potatoes
¼ cup chopped onion (I threw in a handful of frozen onions from last summer’s harvest, but I’m guessing it was about ¼ cup.)
½ cup frozen peas (more if you really like peas, less if you don’t)
1 jar (18 ounces) home-style brown gravy
½ tsp. thyme
½ tsp. black pepper
1 can refrigerated biscuits

Instructions:
Preheat oven to 375 degrees.
Spray a 2-quart casserole dish with nonstick cooking spray.
Combine steak, cooked vegetables, onions and peas in a large bowl. Stir in gravy, thyme and pepper.
Pour beef mixture into prepared dish and bake, uncovered, 40 minutes.
Increase oven temperature to 400 degrees. This is important, or your biscuits will be doughy on the bottom!
Top with biscuits and bake an additional 8 – 10 minutes or until biscuits are golden brown.
Serves 6.
