April Menu Plan

Whew! It’s been a busy month so far, and things are just beginning to ramp up as we finish out our AWANA program and start up summer softball. (Gotta love it when those commitments overlap each spring!)

Good thing I have a monthly menu plan for April, so I’m never left scrambling come dinnertime.

No-knead bread

Week One – Thanks to our Easter ham, this week’s menu features two different ham soups, both using up those leftovers and both delicious, especially when served with this crusty, no-knead bread.

April 1 – Creamy Ham Soup
April 2 – Jambalaya with homemade yeast rolls
April 3 – Roasted chicken
April 4 – Spicy Ham & Black Bean Soup
April 5 – Calzones
April 6 – Biscuits and Gravy with Scrambled Eggs

Week Two – Busy schedules call for Crock-Pots, and this week’s menu plan features two slow-cooker meals, with some Asian, Italian, and American cuisine thrown into the mix.

April 7 – Crock-Pot Tortellini
April 8 – Kung Pao Chicken with Rice
April 9 – Pulled Pork Sandwiches
April 10 – Fettucini Alfredo with Garlic Bread and Salad
April 11 – Sloppy Joes and Potato Chips
April 12 – Poppyseed Chicken
April 13 – Chili

Easy beef stroganoff

Week Three – Crock Pots aren’t the only way to make a quick and easy meal. Take my easy beef stroganoff, for example, or spaghetti and meatballs. It just takes a little planning ahead!

April 14 – Easy Beef Stroganoff
April 15 – Spaghetti and Meatballs
April 16 – Chicken Fajitas, Crock-Pot Style (you knew I couldn’t resist!)
April 17 – Roasted Chicken
April 18 – Creamy Beef and Noodles – another Crock-Pot favorite!

Hearty Steak Pie Bite

Week Four – Casseroles are king this week, with hearty steak pie and chicken and noodle casserole ruling the roost!

April 21 – Chicken and Noodle Casserole
April 22 – Hearty Steak Pie
April 23 – Creamy Crock Pot Chicken Alfredo
April 24 – Fried Fish and Potatoes
April 25 – Cheesy Chicken and Rice Bake
April 26 – Meatloaf and Mashed Potatoes

Week Five – Yep, five (almost!) weeks of menu planning, and we’re keeping it simple the last three days of the month, with hamburgers and hot dogs (yes, I’m hoping to fire up the grill by then!), along with two more American favorites: fried chicken and potato soup. Yum!
