Hearty Steak Pie

- 1 pound top round steak, cooked and cut into cubes or shredded (my family’s preference)
- 1 cup chopped, cooked carrots
- 2 cups diced, cooked potatoes
- ¼ cup chopped onion (I threw in a handful of frozen onions from last summer’s harvest, but I’m guessing it was about ¼ cup.)
- ½ cup frozen peas (more if you really like peas, less if you don’t)
- 1 jar (18 ounces) home-style brown gravy
- ½ tsp. thyme
- ½ tsp. black pepper
- 1 can refrigerated biscuits
- Preheat oven to 375 degrees.
- Spray a 2-quart casserole dish with nonstick cooking spray.
- Combine steak, cooked vegetables, onions and peas in a large bowl. Stir in gravy, thyme and pepper.
- Pour beef mixture into prepared dish and bake, uncovered, 40 minutes.
- Increase oven temperature to 400 degrees. This is important, or your biscuits will be doughy on the bottom!
- Top with biscuits and bake an additional 8 – 10 minutes or until biscuits are golden brown.
